Chocolate & Greens “Perfect” Peanut Butter Bars (Gluten Free & Dairy Free)

If you love chocolate and peanut butter together then yes, the “Perfect” Chocolate Peanut Butter Bars do exist. I’ve been meal prepping a bunch for when baby comes and made a double batch of my “Perfect” Peanut Butter Bars the other day. They are great for meal prepping, freezer prepping or just to have as a healthy, yummy dessert or snack.



These are super easy to make, have minimal ingredients and are lower in sugar than some of the other “perfect” bars out there. No shade to any brands in particular (wink ), but I like being able to control the amount of sugar and protein, as well as what ingredients are being used in whatever I can.


I decided to make a chocolate version with some greens but don’t worry you can’t taste the greens — unless you add way too much of it. I like to add Pines Wheatgrass powder to this recipe for some added dark leafy greens in each serving. They make the best organic greens powder and you can get it here. You can easily make these bars vegan! Swap the honey for maple syrup (use a tad less) and omit collagen.

INGREDIENTS

2/3 cup organic creamy peanut butter

1/3 cup honey

2 teaspoon vanilla

2 Tablespoon coconut oil, melted

3/4 cup almond flour

1/4 cup cacao powder

Pinch of sea salt

2 scoops collagen (optional)


Optional topping: chocolate chips or these cute Rainbow Chocolate Chips from Supernatural.


In a large mixing bowl, combine everything. You can either mix in your chocolate chips or sprinkle them on top. Once a dough ball forms, press it into a parchment-lined glass container. I like to use a rectangle glass food storage container (smaller than a 8x8 square pan). Top with chocolate or rainbow chips and press down again. Place in the fridge for at least an hour. Once bars harden, remove from the fridge and cut into bars or squares.


Store leftover bars in the fridge for up to 10 - 14 days.
