Nothing says summer like a cold, juicy popsicle—especially when it’s made with **real fruit and zero junk**. No joke, the other day my toddler asked for a popsicle at 930am. It was warm out so we had popsicles as a morning snack because why not? We have a little mini garden on our patio that has a bunch of different herbs and some tomatoes. My most favorite herb is rosemary - I love it for sweet and savory recipes and when I was cutting up some watermelon I knew I had to marry the two to make Watermelon Rosemary popsicles. With just three clean ingredients—fresh watermelon, fresh rosemary, and a splash of lime—they’re naturally hydrating and loaded with vitamin C and antioxidants. So perfect for a summer afternoon... or morning.
The rosemary adds a subtle herbal twist that makes these feel a little more *grown-up*, but still totally kid-approved. My toddler devoured his and then asked for another. This is one of those recipes you can feel really good about giving your littles. No dyes, no added sugar, no weird ingredients—just real food, frozen on a stick. And let’s be honest, anything on a stick is instantly more exciting for toddlers (and honestly, us too).
Here are the popsicle molds we have. We love them and use them all the time. They are great for making leftover smoothie popsicles -- you know how your toddler doesn't always finish their smoothie but it wont keep well in the fridge? I freeze my son's leftover smooothies all the time! I like that this silicone popsicle mold is so easy to remove the popsicles from it and it's easy to clean and wash, too.
Whether you’re looking to cool down, sneak in some extra hydration, or just want something refreshing without the sugar crash, these watermelon rosemary popsicles are a go-to summer win—for moms *and* littles. If you don't like rosemary or don't have rosemary try using some fresh basil or mint.
Also worth noting... I don't have measurments because I eyeballed this and saved the leftovers to drink as juice. It depends on how big or small your popsicle molds are. You can eyeball this -- don't be afraid of a recipe without ingredients. I also put that you can totally add some sweetener to your popsicles. I didn't add any but adding 1-2 Tablespoons of honey or maple syurp would go nicely with this!
INGREDIENTS
a few sliced of fresh watermelon
1-2 Tablespoons fresh rosemary, roughly chopped
1 Tablespoon (or a splash) of lemon juice
1-2 Tablespoons honey or maple syrup (optional)
Direcitons: blend ingredients together until smooth. Pour into popsicle mold and freeze overnight. Enjoy the next day with your loved ones!
