The Ultimate Frozen S’mores Treat: A chilled twist on a classic — no campfire required (gluten free + dairy free)

ree

Let's make s'mores — without losing the nostalgic, gooey magic, without a campfire because I don't have one of those in my backyard or in my kitchen and that has some added delicious protein, too.

These frozen s’mores are everything we love about the classic summer treat, but reimagined with some high qulaity protein and a freezer. A fluffy, marshmallow-like filling made from a coconut-based whip (a cool whip alternative) and my favorite grass-fed chocolate protein powder gets sandwiched between crisp paleo graham crackers (homemade of course) and topped with a drizzle of rich chocolate… and just for fun I added a little edible s’mores cookie dough because why not?

They’re gluten-free, dairy-free, high-protein, and ridiculously satisfying. They live up to the hype and then some... they are perfect for meal-prepping a sweet treat for the week, cooling off after a hot day, or sneaking from the freezer when the toddler’s not looking (you know the drill).

Trust me — they’re worth the hype. And the combo of my favorite grass-fed protein powder with the coconut whip truly and magically turns it into a marshmallow texture -- I can't even describe how delicious it is. You have to try it. Doughy just launched a S'mores edible cookie dough at Target and it's just fun to add it to these s'mores.

I make my own homemade graham crackers because I love that I know exactly what's in them and that they are sweetened with coconut sugar and made wholesome organic ingredeints. You can use storebought grahams or make your own. Get your favorite dark chocolate (or milk chocolate) ready and melted, too. You're going to want a batch of these in your freezer all summer long.

For protein powder you can use whatever you like but really the star of making this coco whip into a marshmallow like texture is Be Well By Kelly's Chocolate Protein powder. It's made with just a few (3 to be exact) ingredients and tastes incredible. It's the only protein powder that doesn't give me a tummy ache after. I love adding a scoop of the chocolate or vanilla to my coffee or using their vegan one for baking (it's better for baking than the grass-fed one) and I even make hot chocolate for my son with just some hot water or almond milk and some chocolate grass-fed protein powder. It's a staple in our house. You can use this link to order it and if it's your first order use code KRYSTENSKITCHEN at checkout. If you ever buy 3 bags or more you get an extra discount, too.

INGREDIENTS

graham crackers

1 container of So Delicious CocoWhip

2 scoops Be Well By Kelly Chocolate Protein Powder

melted chocolate of choice

doughy edible cookie dough

Directions: layer graham crackers on a parchment paper-lined baking sheet or dish next to eachother. Mix the coco whip with 2 scoops protein powder and then scoop immediately onto each graham cracker and spread evenly. Add a little cookie dough on top of that (about a tablepsoon of dough flattened out a little) and drizzle melted chocolate over it. Add a second graham cracker over each one as to make a sandwich and pop in the freezer for at least 2-3 hours. Remove from freezer and slice into squares. Serve and store leftovers in freezer.
