No-Carb Chicken Bacon Ranch Pizza: The high-protein, toddler-approved meal that tastes like a total cheat—but isn’t.

This No Carb Chicken Bacon Ranch Protein Pizza is everything you love about pizza night—cheesy, savory, satisfying—but with zero carbs, no grains or gluten and a serious protein punch. It even will give you an amazing cheese-pull. If you know you know.


The other day during my toddler's (supposed) nap time he started screaming out "MOMMY!" over and over again. I ran in because it sounded like something was wrong. I asked him what was the matter and he looked up at me, smiled and said in the sweetest voice, "Mommy? Can we have pizza for dinner?" insert all the rolling eyes and laughing emojis possible. The crust is made from just four simple ingredients: ground chicken, grated parmesan, an egg, and ranch seasoning. That’s it.

It’s the kind of recipe that checks all the boxes:

🍕 high protein

🍕 low carb

🍕 gluten free & grain free

🍕 toddler approved

🍕 easy to meal prep

🍕 still delicious cold the next day

We’ve had this on repeat in my house this summer—sometimes for dinner, sometimes for lunchboxes, and sometimes eaten cold from the fridge while standing at the counter (no shame) even before a sip of my morning coffee becayse it's so, so good. I mean, how can you go wrong with pesto, crispy bacon, gooey mozzarella, and juicy little tomatoes all piled on top of a cheesy chicken crust? You can’t. You just can’t.


I even grew my own tomatoes for this pizza. Don't worry, you don't have to be THAT extra I'm just trying to keep my garden afloat here and while it's been a labor of love it's truly been amazing to grow different herbs and tomatoes and then use them in my recipes. Patio to table... because well I don't have a farm, yet.

It’s a total win for busy weeknights, meal prep Sundays, or when that pizza craving hits but you want to feel good after eating it. I serve it with a little side of ranch for dipping (because obviously), and my 3-year-old devours it every single time. This is real-food pizza you can feel great about.



INGREDIENTS

1 pound ground chicken

2/3 cup parmesan cheese, grated

1 egg

1-2 Tablespoons of ranch seasoning


Top with pesto, mozzarella, bacon and diced tomatoes


Mix chicken, parmesan, an egg and ranch seasoning together into a ball and place it on parchment paper. Cover it with another piece of parchment paper and use a rolling pin or your hands to roll/press it down super thin. Remove the top piece of parchment paper and bake on a baking sheet at 425 for 20-25 minutes. Remove from the oven and top with fresh pesto (or marinara if that’s your jam!). Add some shredded mozzarella, cooked & chopped bacon and tomatoes. Broil for 5ish minutes until the cheese is bubbling. Keep a close eye on it. Remove from the oven, cut and serve dipped in some tasty ranch dressing.
