“Perfect” Peanut Butter Bars + Chocolate Chips (Gluten Free & Dairy Free)

The “Perfect” Peanut Butter Bars do exist and I just have to tell you how fantastic the texture really is. These are super easy to make, have minimal ingredients and are lower in sugar than some of the other “perfect” bars out there. No shade to any brands in particular (wink ), but I like being able to control the amount of sugar and protein, as well as what ingredients are being used in whatever I can.


The full recipe is down below. While the peanut butter makes them technically not paleo, the rest of the ingredients are totally paleo-friendly. You can swap the peanut butter for creamy almond butter and BAM — 100% PALEO! I like to add collagen to these bars, but if you want to make them vegan then omit the collagen and swap honey for maple… and BAM — 100% VEGAN! Collagen adds some extra protein and nutrition benefits. It has no flavor and is great for your bones, joints, skin, hair, nails, digestion and more. You can read more about collagen here.

INGREDIENTS

2/3 cup creamy peanut butter

1/3 cup honey

2 teaspoon vanilla

2 Tablespoons coconut oil, melted

1 cup almond flour

1/4 cup coconut flour

1/4 cup chocolate chips

Pinch of sea salt

2 scoops collagen


In a large mixing bowl, combine everything. You can either mix in your chocolate chips or sprinkle them on top. Once a dough ball forms, press it into a parchment-lined glass container. I like to use a rectangle glass food storage container (smaller than a 8x8 square pan). Place in the fridge for at least an hour. Once bars harden, remove from the fridge and cut into bars or squares.


Store leftover bars in the fridge for up to 10 - 14 days.
