Garlic Quinoa


Well, it's no secret that my hubby and I LOVE garlic! We feel that if it isn't on our plate then something is wrong. We also love raw garlic, and while I don't love hot spicy foods, I can easily eat a spoonful of raw garlic and enjoy every second of it!

I decided one night that we should have quiona and lots of garlic, so I just whipped this up! It's incredibly simple and so tasty if you like garlic.

INGREDIENTS

1 cup of uncooked quinoa

2 cups chicken, veggie or beef broth

8 cloves of garlic (diced)

pinch of salt (if needed)

2 TB of Extra Virgin Olive Oil

It's always a great idea to use broth instead of water when cooking rice or quinoa. It add so much flavor and is delicious plain, but like I said, I love garlic.

Directions:

Rinse your quinoa.


Cook the quinoa as directed on package only using broth instead of water.


Once it is cooked, put your diced garlic in to a pan with EVOO and lightly sautee it on medium heat. Add in your fully cooked quinoa and stir.


Enjoy it plain, with some protein, veggies and even the Cilantro Lime Avocado Sauce!
