Zucchini + Red Onion Salad | Paleo, Gluten Free, Vegan, Whole30

Are you trying to spice up your quarantine kitchen? Try this minimal ingredient but flavorful zucchini salad. We had some zucchini to use so I whipped up this easy recipe last night before our dinner and we stood over the counter and ate most of it right out of the bowl HAH!


Apparently that's how we do Friday nights in Krysten's Kitchen. I'm very okay with that, too.


Don’t be fooled though. This recipe is very flavorful! You can add or omit spices and herbs to your tastebuds. Here we go….

INGREDIENTS:

2 zucchini

1 small red onion


Dressing:

1/3 cup olive oil

1/4 cup white vinegar

2-4 cloves garlic, minced

1/4 cup fresh parsley, roughly chopped

1/2 tsp sea salt

1/8 tsp oregano (dried)

1/8 tsp thyme (dried)


Directions: Thinly slice zucchini and red onions and place in a bowl.


In a separate bowl mix the dressing ingredients together.


Pour dressing in with the zucchini and onions and mix so that all the zucchini is covered.


Serve right away or chill in fridge for an hour and then serve.
