The Tastiest Gluten Free Stuffing Holiday Macaroni and Cheese (Disneyland Inspired)



Stuffing Mac and Cheese is when two beloved comfort foods collide. It's combining the creamy richness of macaroni and cheese with the savory goodness of traditional holiday stuffing. Each bite offers a the perfect blend of cheesy goodness and comforting holiday flavors which creates the most perfect side dish for your holiday meals. Serve it as a side dish to compliment the rest of your feast or make it the main character and compliment it with a nice salad or roasted veggies. This Stuffing Mac and Cheese is sure to be loved by everyone... plus the Mac and cheese is so easy to make, you'll want to make it over and over again.


I first tried this dish at Disneyland a few years back. At Disney's California Adventure during their Festival of Holidays where they have many different food offerings throughout the park that celebrate all the flavors of the holidays. I’ve been making it during the holidays ever since!! I knew I could recreate it to be gluten-free & made with better-for-you ingredients after tasting the Disney version and now I make it with this amazing low carb, keto pasta.


 

INGREDIENTS


2 1/2 cups chicken broth/dairy-free milk combo

2 cups pasta

1 TB grass-fed butter

1/2 cup yogurt*

1 1/2 cup shredded sharp cheddar cheese


Topping:

1 TB grass-fed butter

1/4 cup onion, chopped (optional)

1 TB fresh rosemary, finely chopped

1 TB fresh sage, finely chopped

1 TB fresh thyme, finely chopped

1/2 cup breadcrumbs**


*I use Culina's Plain & Simple dairy - free yogurt.

**I use cracker crumbs. You can make your own by smashing crackers or grinding them up in a food processor. Directions - Pour broth, dairy-free milk of choice (I use unsweetened organic almond milk) & pasta into a sauce pan and turn on medium heat. Bring to a simmer over medium high heat, stirring frequently to ensure broth/milk does not burn on the bottom. Reduce the heat to a low simmer & continue to cook/stir often for about 15-20 minutes or until pasta is soft & your broth/milk is reduced & thickened. Add butter (optional) & plain yogurt, stir. Add shredded cheese & stir until cheese is melted & sauce formed. In a separate skillet on medium heat, add 1 TB butter & once melted add onion & fresh herbs. Sauté for a few minutes until onions have softened. Add breadcrumbs and stir.. Turn off heat. Add Mac & cheese to an oven safe baking dish & top with herb and crumb mixture. Bake at 375 for 15 minutes or until bubbly. Serve and enjoy.
