Discover The Best Frosting Recipe in the World: Raspberry Lemon - a powerful flavor combo you need to taste
This frosting is from my signature cake. I now have a signature cake and while I haven't shared the cake part yet I do want to share the frosting with you because I love you. Having a signature dessert or cake is like owning an edible masterpiece that you can share with your loved ones. It becomes a reflection of your personality and encompasses so much heart, too. It becomes a symbol of the family and a new tradition that you get to create. I made this incredible cake for my son's first birthday and it was love at first bite... for everyone. Everyone made it a point to ooooh and ahhh and make yummy noises with each bite. Baking can be a labor of love but it's certainly worth the memories made for whatever occasion is celebrated with your signature dessert.
You can of course use whatever vanilla frosting you'd like to. This is what I had on hand at the time and while we don't ever buy or consume cane sugar in this house I do at least like that it's made with organic ingredients. I've been working on my cane sugar free frosting recipe for this but as a mom of a toddler and who works and has a long list of things to do all the time sometimes, things have to give. But I'm so grateful to Miss Jokes Bakes for making this organic vanilla frosting!
This is the tastiest cake ever made but I’m only sharing the frosting with you for now. I'm debating on sharing the entire cake recipe. Should I? It will BLOW YOUR MIND. (Here's a picture from our son's first birthday party which was Winnie the Pooh themed.)
INGREDIENTS
1 lemon, juiced and zested
1 Tablespoon vanilla
1 cup fresh raspberries
Directions: Mix everything together and then pop it in the fridge for 15-20 minutes if you want it to solidify a little more. Depending on how much frosting you need for whatever you’re making you can adjust accordingly.
NOTE: I used 2 cans of frosting (so we had leftovers for some cupcakes), 1 lemon juiced and zested, vanilla and fresh raspberries. You can add more or less lemon zest but the more liquid you add the thinner the frosting will become. Keep that in mind. Enjoy it with chocolate cake, vanilla cake or whatever cake you’re making.
