Simple Mills "Brookie" | Brownie & Cookie
This year at Expo West, Simple Mills launched their newest product: a Brownie baking mix. It definitely was a highlight of the expo this year and even made my Top 10 Favorites Finds, too. I don't even want to tell you how many times I stopped by their booth to eat a brownie sample, but let's just say that I lost count.
I couldn't even wait to order this new mix and make this recipe. I used Simple Mills Chocolate Chip Cookie Mix and the new Brownie Mix to create something very magical and the outcome is just too tasty for words.
A "brookie" is what happened when a brownie and a cookie have a baby. It's a pleasure to share this recipe with you that is so easy you will be so thankful you made it!

INGREDIENTS
1 box Simple Mills Brownie Mix
Directions:
Prepare brownie batter as directed on the box and pour batter into a prepared 8 x 8 or 9 x 9 baking dish. It helps if you add a little parchment paper to help you remove the brownies from the pan after baking. Set aside.
Prepare the cookie mix as directed on the box and add spoonfuls of the dough to the top of the brownie batter so it covers the top. It doesn't have to be perfect.
Bake at 375 degrees for about 30-35 minutes until the center is baked. Allow to cool, cut and enjoy with a glass of dairy free milk.
