One-Pot Gluten-Free Enchilada Skillet: Flavorful + Effortless! Bold & cheesy flavors of enchiladas in a quick & easy skillet—no rolling required!

One-pot meals really simplify dinnertime. When you can combine all the ingredients into a single pan and eliminate extra dishes the food tastes better and cleanup is a sinch. When it comes to enchiladas, a one-pot skillet version saves time by skipping all the rolling and layering, while still delivering all the cheesy, saucy goodness. Everything cooks together which creates a flavorful, easy meal and again reduces the cleanup time giving you more time to get things done on your long to-do list or more time with your family.


Whether you're feeding a family or just need a quick, easy dinner with killer leftovers, a one-pot enchilada skillet is the perfect weeknight (or weekend) meal! Trust me on this. Top with whatever you like and make it your own. I have loved making this a bunch this winter on cold nights when we're all craving something nice and cozy.

INGREDIENTS

1 pound ground beef

1 zucchini, diced

1/2 onion, diced

1 bell pepper, diced

1 jar Siete Foods enchilada sauce

1 can black beans, rinsed & drained

5-6 Siete Foods tortillas, cut into squares

3/4 cup shredded cheddar cheese (or cheese of choice)


Additional 1/2 cup shredded cheese for broiling


Garnish with - green onions, cilantro, tomatoes, cheese. avocado and sour cream (olives and jalapeños are great, too)


Preheat the oven to 400 degrees and in an oven safe skillet (I used my @lodgecastiron ), sauté bell peppers, zucchini and onions and ground beef until meat is cooked and zucchini is soft. Pour in enchilada sauce, black beans and 3/4 cup shredded cheese and stir. Add tortilla squares and fold in so they are coated and evenly dispersed. Top with the other 1/2 cup of shredded cheese and bake at 400 for 10 minutes. Broil for extra 3-5 minutes. (Optional)


Add toppings and serve.
