Donut (Bread) Pudding | Paleo, Gluten Free, Grain Free
If you think bread pudding is delicious then saddle up because DONUT bread pudding takes it to the next level! Yes - you read that right. This is bread pudding made with the most delicious donuts ever from my favorite bakery, Misfits Bakehouse. Their donuts are grain-free, gluten-free, paleo, dairy-free and low carb/keto-friendly, too.
Misfits Bakehouse is in Palo Alto, California, and they ship nationwide. It’s a dedicated gluten-free, grain-free bakery with incredible pastries and breads, too. I couldn’t tell you what my favorite things are because I love everything they make. They recently started making hot, fresh donuts (for you lucky locals) and also ship them nationwide so for those of us poor unfortunate souls who can’t pop over to Misfits anytime we want… we still get the amazing option to have the goods delivered right to our doorsteps. So grateful for Mina and all the he creates at the bakery. For those of us that have special dietary restrictions, food allergies and intolerances, he truly gives us a sense of normalcy again with is breads and pastries.
6 donuts (about 6 cups cubed)
2 Tablespoons melted butter or coconut oil
1/4 cup coconut cream
1.5 cups coconut milk
1 Tablespoon vanilla
1 teaspoon cinnamon
Pinch of sea salt
3/4 cup coconut cream
1/4 cup + 2 TB maple syrup
1/2 teaspoon cinnamon
2 teaspoons vanilla
Directions: Preheat oven to 350 degrees.
Cut donuts into cubes and place in an 8 x 8 baking dish sprayed with coconut or olive oil. Drizzle melted butter or coconut oil over donut cubes and set aside. In a separate bowl combine eggs, coconut cream, coconut milk, vanilla, cinnamon and pinch of sea salt. Pour mixture over donuts and make sure that it’s fully combined. Allow it to sit for 5 minutes.
Bake for 50-60 minutes. Once donut bread pudding is done, prepare caramel syrup.
In a small sauce pan, mix coconut cream, maple syrup, cinnamon and vanilla on medium heat constantly stirring. Bring to a low simmer. It will thicken up. Continue simmering for about 3-5 minutes, stirring occasionally and then remove from the heat.
Drizzle over donut bread pudding and serve hot with fresh berries.
