Cranberry Orange Loaf + White Chocolate (Paleo & Gluten Free)
New year, new recipe. I "LOAF" this recipe, and you will, too -- I promise. It's been a huge hit with the family, and we've been eating it for breakfast and dessert. It's great with or without the frosting, too.
Now is a great time to stock up on fresh cranberries and pop them in the freezer to enjoy over the next couple of months and to make this recipe a few times. You could also use dried cranberries as well.

INGREDIENTS
2 cups almond flour
2 Tablespoons coconut flour
2 Tablespoons flax seed meal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar (I used monk fruit)
1 tablespoon almond milk
1/4 cup olive oil
2 eggs*
2 tablespoons nut butter (I used cashew butter)
1 tablespoon vanilla extract
2 tablespoons fresh orange juice
Zest of one orange
1 cup fresh cranberries
1/4 cup white chocolate chips
Frosting Recipe:
1/3 cup fresh orange juice
5 to 6 tablespoons cashew butter
1 tablespoon maple syrup (optional)
*To make vegan: omit eggs and add in an extra 2 tablespoons of flax seed meal. It might be a little harder to slice but is wonderful scooped out in a bowl and eaten with a spoon. We love a vegan version of this amazing loaf!
Directions: Preheat oven to 350 degrees.
In a large mixing bowl, mix together all dry ingredients: almond flour, coconut flour, flax seed meal, baking powder, baking soda, salt and sugar.
Mix the wet ingredients in a separate bowl: eggs, almond milk, olive oil, cashew butter, vanilla and orange juice.
Combine dry ingredients into the wet ones. Lightly mix in orange zest, fresh cranberries and white chocolate chips.
Prepare a loaf pan with coconut or olive spray or line with parchment paper. Pour batter into a loaf pan and bake for 45 minutes. Remove loaf from the oven, and let it rest for 15 minutes.
Make frosting:
Combine cashew butter with fresh orange juice and maple syrup (optional). It might seem runny and unable to mix but just give it a second and keep mixing it. I prefer to use a hand mixer for this.
Once mixed, drizzle over warm loaf, slice and serve.
