Paleo Onion Rings
Onion rings are delicious all the time, especially on my Paleo Chicken and Waffles or my Gluten Free Chicken and Waffles. They taste great on the side of any meal or just as a treat!
I wanted to spruce up my chicken and waffles one day, so I decided to make onion rings because, well, that really steps up my chicken and waffle game! These would be great on any sandwich or burger, too.

Let’s get to onion-ing.
TO MAKE NUT FREE:
use cassava flour and avocado oil!

INGREDIENTS:
1/2 Sweet Onion
1 egg
1/3 cup coconut flour
1 TB cassava four (optional)
1 tsp sea salt
Oil of choice for frying. I use a avocado/coconut oil.
Directions:
Slice onions into rings. I prefer them thin.
Pour about 1-2 cups of oil in a skillet with high sides. You need just enough so that when you place the onion ring in the hot oil, it won’t touch the bottom. Turn on medium to high heat.
In a medium size bowl, crack 1 egg and whisk.
In another medium size bowl, add sea salt, coconut flour and cassava flour.
Dip each onion ring into the egg and coat.
Transfer the onion to the flour mixture and coat fully.
Using a fork or long tongs, place the onion into the hot oil and allow to cook for about 1 minute. Flip the onion to the other side for about 45 seconds to a minute. Each side should be browned.
Using a fork or long tongs, transfer to a paper towel on top of a plate. This way, the paper towel absorbs the excess oil.
Serve hot, with sauce, a dip, on a burger, sandwich, on the side or on Chicken and Waffles.
