Air Fryer Paleo Chicken & Waffles
Chicken and waffles was never my thing. I never ordered it. I never craved it and, to be honest, it didn’t interest me until a few years ago. I don’t even know when exactly my first bite of this delicious combo was, but I can tell you that it had to be within the last 2 years. This combo really works for me, and I’m sure that it will work for you, too!
I got the idea to create this recipe when we were in Las Vegas at one of our favorite late night… umm… actually 24 hour restaurants called Hash House-A-GoGo. Jeff decided to order the Chicken & Waffles, which is a house favorite, and it was HUGE! The added rosemary sticking out of the top was just amazing! I feel like when we eat out and travel around I often say to myself, “I want to do that!” or “I could do that & make it safe for me to eat.” So I did just that.
I’ve gotten many people hooked on the Air Fryer. I LOVE using my air fryer! It makes for a really easy clean up, and I just can’t get enough. THIS is the air fryer that I use.
The photo you see at the moment is from my Gluten Free Chicken & Waffles recipe. I use chickpea crumbs to bread the chicken. When I made the paleo version, I started eating before I could take a photo, and, well, that was that. So as soon as I make it again, I will upload an actual photo of the paleo version -- but to be honest it basically looks the exact same way! YUM!
I also decided to really go for it and make onion rings, too. Why not? You can see that recipe, here. When the chicken is in the air fryer, that’s when you have time to make the onion rings so they are nice and hot for your chicken and waffles.
Note: Use 3/4 cup Nut Crumbs and 1 egg per 2 chicken breasts. Feel free to double or triple this recipe. Leftovers rule!

INGREDIENTS:
3/4 cup Original NutCrumbs
1 egg
2 chicken breasts
Onion Rings - optional (recipe here)
4 Kitchfix Paleo Waffles
Maple Syrup
Directions:
If you plan to make onion rings, please read that recipe before you start making the chicken.
In a medium size bowl, crack 1 egg and whisk.
In another medium size bowl, add 3/4 cup Original Nut Crumbs.
Place one chicken breast in the egg mixture and coat. Transfer the chicken to the Nut Crumbs mixture and coat completely.
If you like, you can spray a little olive oil in the air fryer, but it’s not necessary. Place the chicken in the air fryer and, once again, if you like you can spray a little olive oil spray directly on the chicken.
Cook at 370 degrees for 10 minutes and flip the chicken. Cook for another 8 minutes. The time can vary depending on the thickness of your breasts… chicken breasts that is!
While the chicken is cooking, make your onion rings.
Once the chicken is fully cooked, assemble with waffles, onion rings and syrup. Enjoy
