Easy Roasted Colorful Carrots


I love seeing these beautiful carrots at Trader Joe’s! They’re so colorful and just scream Fall! They make the perfect side dish for any dinner and don’t take very long to make. You can serve them as a side dish at your next family dinner, and they’ll add beauty to whatever you serve. They pair well with my World’s Fluffiest Mashed Potatoes!


Trader Joe’s Colorful Carrots are pretty to look at and tasty to eat, so definitely get your hands on them. Of course, you can use any carrots for this recipe, though the colorful carrots are a lovely Fall dish.

INGREDIENTS

1 Bag Trader Joes’ Les Petites Carrots*

Seasoning of choice

Olive Oil

*You can use any carrots you like. Each bag of Trader Joes’ Les Petites Carrots* is about 1 pound.

Directions:

Place the carrots on a baking sheet lined with parchment paper. Drizzle with your favorite olive oil to ensure each carrot is coated. Add seasoning of choice. I like parsley, garlic, black pepper and Primal Palate’s Garlic & Herb. You can use your hands to really mix them.

Lay them out on the baking sheet in one layer to make sure that every carrot is touching the baking sheet.

Roast for 25 minutes at 400 degrees

Serve hot on a nice platter or dinner plate.
