Paleo Puppy Chow / Muddy Buddies


I’ve wanted to make this for a very long time. I used to love it when I was growing up. I mean — what’s not to like? Sugar with chocolate and peanut butter and cereal? Win, win, win, win!

Well, I wouldn’t eat it anymore and haven’t had it in over 10-12 years, but I’ve been cool with that. I have, however, been trying to figure out how I can make it myself, but every cereal option that I’ve found has ingredients that I can’t eat, like corn, wheat or sugar.

Finally I decided, okay Krysten! It’s time to make your own.


I used Simple Mills Pancake & Waffle Mix to make the cereal. I would say it’s more like a little teeny-tiny cookie than traditional Chex cereal. But it totally works and is just as addicting and tasty as the “puppy chow” I knew and loved. (Past tense, hah!)

You can use any nut butter that your heart desires. We are a cashew butter house. You do you!

INGREDIENTS

Cookies:

1 box Simple Mills Pancake & Waffle Mix

1/4 cup water

The Rest:

1/4 cup cashew butter

1/2 cup chocolate chips*

2 TB vegan butter**

1 tsp vanilla

3/4 cup coconut powdered sugar***

*For this recipe I used Lily’s Stevia Sweetened Chocolate Chips. You can use Enjoy Life Allergy Friendly Chocolate Chips or melt your favorite chocolate bar.

**We prefer Miyoko’s Vegan Butter. Use whichever dairy free butter you like.

***Coconut or Maple sugar will work. See my recipe on how to make coconut or maple powdered sugar.

Directions:

Preheat oven to 275

In a medium sized bowl, pour the Simple Mills pancake mix into the bowl along with the 1/4 cup of water. mix until forms a dough. It will seem dry at first, just use your hands. It will come together.

Roll out dough between 2 pieces of parchment paper. Keep it thin, about 1/4-1/8 inch.

Use a pizza cutter to cut little squares in the dough. Keep them each about the size of a U.S. dime.

Spread them out on a cookie sheet on parchment paper and bake for 20 minutes. Allow to cool.

Melt your Chocolate over a double broiler. Once it’s melted, add in your cashew butter, butter and vanilla and stir.

Pour over the cooled “cookies” until every piece is coated. You might have to pull some a part.

Pour 3/4 cup of coconut powdered sugar into the bowl and stir until each piece is coated. You might have to pull some a part, still. Once coated, transfer to a serving bowl and enjoy.
