No Bake Love Grown Cinnamon Cereal Bars


Behold! The brand new cereal from Love Grown is available in Sprouts, and our family is obsessed. It’s a cinnamon cereal that tastes like a childhood favorite but better and much, much better for you! I wish I could actually eat more of it than I can, but this cereal does have a small amount of cane sugar. I have tried it and have had a very small bowl on occasion … for research purposes, of course! HAH


In case you don’t know already, I am pretty intolerant to cane sugar. I can have a bite, and it won’t necessary affect me in a way that I will notice, but too much cane sugar can lead to not-so-fun stuff. You can read more about that here.

I should also say that while Love Grown does use cane sugar in their cereals, there is very minimal sugar overall. For a tasty cereal made from beans, might I add, they have less sugar than many of the other brands out there that cater to kiddos, and I love that. Plus, the Love Grown fam is super sweet! They really care about the ingredients and the quality of ingredients that they use in each of their cereals.

There are no fillers or additives in their cereals, plus they are Certified Gluten Free, Vegan and NonGMO project verified! And, as I said before, their cereals are made from BEANS! They use lentils, navy beans and garbanzo beans to make their incredible line of cereals which you can see here.

They, of course, use lots of LOVE when making their cereals, which I think we can all appreciate!

Okay back to the recipe... these bars remind me of cereal and milk. There is just something about them that taste nostalgic to me.

This no bake recipe is vegan, gluten-free and there is no cane sugar in the recipe, though there is a very small amount in the cereal itself. This recipe is dairy- free, egg-free, grain-free and oil-free.

INGREDIENTS

Bottom Layer

2 cups Love Grown Cinnamon cereal

2 dates

2 tsp flax seed meal

2 tsp dairy free milk (1TB)

2 tsp Vanilla

1/4 tsp cinnamon

Middle Layer

1/2 cup cashew butter

1/2 tsp vanilla

1 TB maple syrup

1/4 tsp cinnamon

Top Layer

1/2 cup raw cashews

1/4 cup water

1-2 tb maple syrup*

1 tsp vanilla

1 pinch sea salt

Top with about 3 TB Love Grown Cereal to crumble on top or top with uncrumbled cereal. Whatever floats your Love Boat! :)

*start with 1 TB of Maple Syrup and if it isn’t sweet enough, add the 2nd TB.

Directions:

In a food processor or blender, add cereal and blend until it in crumbs. Add dates, flax seed meal, dairy-free milk, cinnamon and vanilla. Pulse until well combined.

Use parchment paper to line a loaf tin. Press mixture into the loaf pan. Use a flat edge measuring cup or second loaf tin to press mixture firmly.


Put in fridge for 10 minutes.

Prepare middle layer. Mix cashew butter with vanilla, maple syrup and cinnamon. Spoon into the loaf pan evenly over the bottom layer. Put back in fridge for 10 minutes.


For top layer, mix cashews, water, maple syrup, vanilla and sea salt into the blender until smooth.

Pour evenly into the loaf pan on top of middle layer.


Sprinkle some cereal on top (crushed or whole pieces) and put back in the fridge for 20 min so that the top layer thickens and hardens a little on top. For a firmer bar, put in freezer for 20 minutes.


Once the center is firm, remove from fridge and cut into squares.

Serve as breakfast, dessert or as a snack. Keep in mind that the cereal on top will only be crunchy that day. If you are preparing ahead of time, leave cereal topping off until you're ready to serve.
