Chocolate Chip Gingerbread Muffins


Chocolate Chip Gingerbread Muffins for breakfast are a great idea! These muffins have simple ingredients like Vital Proteins brand new Gingerbread Collagen Creamer, and are easy to whip up and enjoy for breakfast, a snack or even dessert… we have been enjoying them with our morning lattes, lately.

There is no cane sugar, flour, butter or oil in this recipe. They are super moist, fluffy and so delicious + they are gluten free, dairy free and paleo!

INGREDIENTS

4 eggs

1 tablespoon apple cider vinegar

1/2 teaspoon baking soda

1/4 cup almond butter

3/4 cup cashew butter

4 scoops Vital Proteins Gingerbread Collagen Creamer

2 tablespoons maple syrup

1/2 teaspoon cinnamon

1/3 teaspoon ginger (powdered)

1/2 cup chocolate chips

pinch sea salt

Directions:

Mix all ingredients together, let sit for 3 minutes.

Spray muffin tin. Fill muffin tin 3/4 full of batter.

Bake at 350 degrees for 15-18 minutes. Enjoy.
