2 Ingredient Cupcakes featuring Simple Mills Vanilla Cake Mix & Zevia Soda (Halloween edition)


Let me start of by saying that whenever I see these recipes for 2 ingredient anything, people are using a box of cake mix that is has terrible ingredients and either jello (that has all kinds of red dye #40 and sugar) or something like a pound of cream or butter or something unhealthy like that.


I have seen posts about 2 ingredient cakes using a can of soda - the kind of soda I wouldn't touch with a 10 ft pole and a box of cake mix that once again has bad ingredients and all kinds of sugars. So I decided to use a soda that my family and I love, Zevia, and a cake mix that my family and I love just as much: Simple Mills Vanilla Cake Mix, which is made with almond flour! It's low carb, made with coconut sugar and has only 6 ingredients in the mix!

Well, it worked for sure! I also used Simple Mills brand spankin' new Organic Vanilla Frosting to turn these mini cupcakes into little mummies and used Enjoy Life Foods vegan mini chocolate chips to give them eyes. You can add shredded coconut to them if you like!

INGREDIENTS

1 Box Simple Mills Vanilla Cake Mix

3/4 can Zevia Cola

Directions:

Set oven to 325 degrees.

Pour Simple Mills Vanilla Cake Mix and 3/4 can of Zevia Cola in a large mixing bowl and stir until combined. Generously spray a mini muffin tin with coconut oil spray or olive oil spray until fully coated.

Carefully pour batter in filling each cup 3/4 the full. Bake for 16-18 minutes until you can insert a toothpick in the middle and it comes out clean.

Halloween Cupcakes: Fill up a ziplock bag with Simple Mills Organic Vanilla Frosting and cut a small corner off. Drizzle the frosting over the cupcake and add 2 mini chocolate chips as eyes!
