Product: Namaste Foods Muffin Mix
Last Wednesday, I was a guest on The Tim & Corey Show. I had a half-hour segment to talk about Krysten’s Kitchen and even mentioned a few of my recipes as well as some of my favorite brands… one of those favorites is Namaste Foods! I really love this company and the fact that they provide delicious foods that are free of the top allergens so that everyone can enjoy them. You might have already seen my review on their delicious, fudgey Brownies or their yummy Pizza Crust Mix. You might have even heard me announce a special giveaway that they are sponsoring that ends tomorrow May 13th, 2015.
Namaste Foods makes quality foods that have good quality ingredients for all to enjoy. I recently made their Muffin Mix and I highly recommend it! My hubby and I have enjoyed a muffin with our coffee and a protein shake each morning for breakfast! I even added my own twist to them...
Who doesn’t love muffins? I mean, they are moist, you can eat them for breakfast, a snack, dessert or really any time of the day and you can customize them with whatever you want in them: chocolate chips, berries, nuts, seeds, etc.
I was looking at the short list of ingredients in Namaste’s Muffin Mix and it got me thinking… why do other mainstream brands add so many unnecessary ingredients into their mixes? There really is no need to do that!
One mainstream brand (which I will not name) has so many ingredients in their mix, most of which I cannot have (wheat, processed sugars, corn, etc.) as well as some that I cannot pronounce! I am not surprised there is more than one form of corn on the list because corn is such a popular “filler” in almost everything at the grocery store… but why is there added color and why are there artificial flavors? Are the natural flavors and colors of the berries not good enough? (photo below)
In Namaste Foods Muffin Mix you will see a much shorter list of ingredients, all of which I can pronounce and recognize. The only additional ingredients needed for this mix are what is listed. It does not need added color or artificial flavors because those are not natural things! (photo below)
When you purchase this product, know that you will need 2 eggs (or flax eggs), 1/4 cup of oil and 1 cup of water to complete the recipe. I prefer to use extra virgin olive oil in all my baking, so I used olive oil and replaced the water with freshly brewed (but chilled) espresso. Of course, I also added Enjoy Life Mini Chocolate Chips because, why not?
I followed the directions by mixing the wet ingredients and adding in the dry mix, then baking them in Disney muffin liners for about 13 minutes... I have no idea how many it made because my hubby and I ate a few while they were still hot... I think it made about 15-18 muffins. They were so tasty!

Mix your wet ingredients (room temperature or chilled espresso, eggs or flax eggs and olive oil).
Then add your dry mix and fold in 1/3 - 1/2 cup of the Enjoy Life Mini Chocolate Chips.
Use a cookie scoop to spoon the batter into each muffin in. I used Disney liners because, once again… why not?
Bake your muffins at 400 degrees for 13-15 minutes. Let cool and ENJOY!
Would I make Namaste Foods Muffin Mix again? YES! I would make them again in a heartbeat! I love that the mix is designed to be customized with whatever your heart desires… Enjoy Life Mini Chocolate Chips, berries, nuts, juice instead of water or coffee, etc. You could even make them savory with green onions, some nutritional yeast and garlic (mmmhhhmmmm I think I will do that next)! I have said it so many times, I really love this company and I am so thankful for all that they do for people like me, so that we may enjoy muffins, brownies, pizza and so many other things.
