Frozen Green Treat (Mint Chocolate Chip Soft Serve Ice Cream)



Because I love Disney (it's my all time favorite), because they just announced that Frozen 2 (I am way too excited about this) is in the works, and because it's St. Patrick's day on Tuesday, I thought this would be a great recipe that would combine all of these celebrations! Plus, it's my hubby's birthday tomorrow, so I knew he would like this for dessert tonight!

How about a FROZEN treat that has no milk, dairy, processed sugar or junk in it? There is no food coloring in it either, by the way!

This yummy green dessert is one that my hubby loves and says we are eating vegetables for dessert---> yes you read that right!

INGREDIENTS

1 avocado

2 cups spinach

1/8 teaspoon peppermint extract (if you like it extra minty use 1/4 tsp)

1/3 cup Dolcedi Apple Sweetener (or Agave/honey)

2-3 cups of ice*

1/2 Cup Mini Chocolate Chips or broken chocolate bar

1tsp vanilla (optional)

*It really depends on how big your avocado is. If it's a bigger avocado, use more ice. You can't ruin this recipe. If you use too much ice, pour a little Good Karma Flax Milk or almond milk in it. If you need more ice, put some more ice in it. It's a good idea to use ice made with filtered water.

Directions:

Put all ingredients (except for the chocolate chips) in your Vita Mix or blender and blend until smooth. If you can turn your blender upside down and the mixture will stay put and not fall out or drip then, by golly, you've done it (Do not do this unless it's over the sink or have the lid on)! If you can't turn it upside down without it spilling all over the floor, that's okay, too. It just means you have more of a soft serve ice cream - which we love!


After blended, add 1/2 cup mini Enjoy Life mini chocolate chips (which are the greatest vegan chips around) and blend for 10 seconds or so. Some of the mini chips will break up and some will stay whole. If you prefer they are all broken up, blend a little longer.

Go easy on blending, you don't want the hot blades to then melt your mint chocolate chip ice cream!

If you want to top it off with a dairy free whipped cream, I am sure it would taste fantastic!

I'm pretty sure Olaf would enjoy this FROZEN green treat whether in fall, winter, spring or in summer!
