Hygge Sprinkle Cookies (Paleo-ish | Gluten Free | Vegan Option)

What is HYGGE? (Hue-gah). It’s a Danish word for enjoying life’s simple pleasures. Enjoying the things that bring you happiness & joy.


So yes — sprinkles are totally hygge. It could be the only hygge that you need to make you smile in a moment.


HYGGE can be drinking your morning cup of coffee, a good book, a cozy sweater, a yummy smelling candle or listening to the rain or you know… adding some natural colored sprinkles to your cookies just because.



These cookies are made from Artisana Organics brand new Hemp & Brazil Nut Butter blend. I also used Color Kitchen Foods & Supernatural sprinkles on top. Both are made with cane sugar and vegan plant based natural food colors (beets, Spirulina, turmeric etc). I love both of these options because they are made without all the bad artificial food colorings which actually are very harmful to your body. You can learn more about that here.

INGREDIENTS

1/4 cup coconut or maple sugar*

1/4 cup coconut oil, melted

1 egg**

1/2 tsp baking soda

1 TB vanilla

Pinch of sea salt


Side note: The sprinkles are not technically paleo as they do contain cane sugar.


*For a sweeter cookie, increase to 1/3 cup coconut or maple sugar.

**To make vegan, use flax seed egg - mix 1TB with 3TB warm water. Allow to sit for 2 min. Use in place of egg.


Directions:


Preheat oven to 350 degrees.


Mix wet ingredients together: egg, melted coconut oil, Hemp & Brazil Nut Butter and vanilla.

Add coconut or maple sugar, baking soda, sea salt and Bob’s Red Mill Paleo Flour and mix batter together.


Scoop cookies onto parchment paper lined baking sheet and flatted. Add desired amount of sprinkles and bake for 10 minutes.


Hygge.
