Air Fryer Gluten Free Chicken & Waffles



Chicken and waffles was never my thing. I never ordered it. I never craved it, and, to be honest, it didn’t interest me until a few years ago. I don’t even know when exactly my first bite of this delicious combo was, but I can tell you that it had to be within the last 2-3 years. This combo really works for me, and I’m sure that it’ll work for you, too!

I got the idea to create this recipe when we were in Las Vegas at one of our favorite late night… umm… actually, 24 hour restaurants called Hash House-A-GoGo. Jeff decided to order the Chicken & Waffles, which is a house favorite, and it was HUGE! The added rosemary sticking out of the top was just amazing! I feel like when we eat out and travel around I often say to myself, “I want to make that!” or “I could do that & make it safe for me to eat.” So I did just that.

I decided to really go all out with this recipe and make onion rings to go along with it, too. Why not? You can see my onion rings recipe, here. When the chicken is in the air fryer, that’s when you have time to make the onion rings, so they are nice and hot for your chicken and waffles.

I’ve gotten many people hooked on the Air Fryer. I LOVE using my air fryer. It makes for really easy clean up, and I just can’t get enough! THIS is the air fryer that I use. If you are hesitant about getting one, just know that I was hesitant too and I didn't really think it would be all that great. I was very wrong. It's honestly even better than I imagined. If you want to upgrade to a cooler, better air fryer that is twice the cost then check out this one! It's on my wishlist!

Note: Use 3/4 cup Watusee Foods Chickpea Crumbs and 1 egg per 2 chicken breasts. Feel free to double or triple this recipe because leftovers rule!

TO MAKE NUT FREE: use nut free waffles (consider Enjoy Life Foods allergy friendly Pancake & Waffle Mix)

use cassava or tiger nut flour for onion rings (optional)

use avocado oil in place of coconut oil in onion ring recipe (optional)

INGREDIENTS:

3/4 cup Watusee Foods Chickpea Crumbs*

spices to taste**

1 egg

2 chicken breasts

Onion Rings - optional (recipe here)

4 Kitchfix Paleo Waffles

Maple Syrup

*You can also use Watusee Foods Rosemary Crunchy Chickpeas in place of Chickpea Crumbs. Just pulse in a blender or food processor until they turn into crumbs.

**If you use plain Watusee Foods Chickpea Crumbs, add your favorite spices: rosemary, garlic, onion, sage, parsley, black pepper — whatever you like. Taste the crumbs before you start dipping the raw chicken in it to get it just right.

Directions:

If you plan to make onion rings, please read that recipe before you start making the chicken.

In a medium size bowl, crack 1 egg and whisk.

In another medium size bowl, add 3/4 cup Watusee Foods Chickpea Crumbs.

Place one chicken breast in the egg mixture and coat. Transfer the chicken to the Watusee Foods Chickpea Crumbs mixture and coat it completely.

If you like, you can spray a little olive oil spray in the air fryer. However, it’s not necessary. Place the chicken in the air fryer and, once again, if you like you can spray a little olive oil spray directly on the chicken.

Cook at 370 degrees for 10 minutes and flip the chicken. Cook for another 8 minutes. The time can vary depending on the thickness of your breasts… chicken breasts that is!

While the chicken is cooking, make your onion rings.

Once the chicken is fully cooked, assemble with waffles, onion rings and syrup. Enjoy!
