Pumpkin Spice Peanut Butter Cookies
My hubby loves all things pumpkin. If he could eat pumpkin spice goodies all day every day throughout the entire year, he totally would. We actually buy some pumpkin spice products that have a long shelf-life to have them well into the Spring. Why not?

I love Wild Friends’ nut butters. Their Organic Honey Sunflower Butter is by far my favorite, and I just realized they also have an Organic Maple Sunflower Butter… and now I need to see where I can get that one. That one sounds amazing!
I brought some Honey Sunflower Butter single serve packets with us to Europe to snack on while we were out exploring. They definitely came in handy! I enjoyed eating some while exploring the beautiful Sleeping Beauty Castle in Disneyland Paris. Last year I bought 4 jars of the Pumpkin Spice Peanut Butter as a surprise for my husband and he freaked out! He fell in love with it, and I knew I had to make him cookies out of it. If you try them and love them, stock up so you can eat them throughout the rest of the year to tide you over until the following Holiday Season!
Here is my hubby’s favorite Pumpkin Spice Cookies using Wild Friends awesome Pumpkin Spice Peanut Butter, and they are topped with 2 of our favorite spices from Primal Palate: Cinnamon Sugar Cookie and Pumpkin Pie Spice. I love how fresh the spices are from Primal Palate. They are all Paleo, too. Plus their spice blend combinations are divine! You should definitely check out Primal Palate's incredible spices!
1/4 cup + 2TB maple syrup
1 tsp baking soda
1 tsp vanilla
1/2 cup vegan butter, room temperature (we use Miyoko’s Vegan Butter)
pinch of sea salt
*Can sub a flax egg to make vegan. Flax egg - mix 3 TB of warm water with 1 TB of flax seed meal. Let it sit about 3 minutes until it forms a gel = 1 egg
**If you don't have Cinnamon Sugar Cookie, use equal parts, cinnamon and coconut sugar to sprinkle on cookies along with some Pumpkin Pie Spice.
In a large bowl, mix Pumpkin Spice Peanut Butter, maple syrup, vanilla, egg and butter.
In another bowl, mix flour, baking soda and sea salt.
Add dry ingredients to wet ingredients and mix well.
Spoon dough onto cookie sheet using a large cookie scoop. Don’t press them down. Leave them in little round mounds.
Sprinkle cookies with Cinnamon Sugar Cookie and Pumpkin Pie Spice.
Bake at 350 for 10 minutes or until top is firm to the touch.
