Simple Mills Chocolate Mocha Cake - Happy 29th Birthday to Me

It's that time of year again! The cooler weather, scarves and sweaters, Fall Foods… and it's my birthday! This year, I am celebrating my 29th birthday with my husband at the second happiest place on earth, Walt Disney World!

This year I had a birthday giveaway on my Instagram and Facebook, and so many of you voted on which cake I should make for my birthday!

While it was a tie for much of the time, Cake #1 took the win and the cake was outright decadent, and a true chocolate lovers dream. As my mom would say, "this cake was to LIVE for!" Holy Toledo!

I used 3 Simple Mills Chocolate Cake mixes and 3 of their brand spankin' new organic vegan frosting for this cake. I used Chameleon Cold Brew Organic Mocha Coffee Concentrate instead of water and crumbled Newman O's cookies to coat the outside.

My cake topper was too adorable! I custom designed and ordered it from The Party Palate on Etsy, and I couldn't be happier with the outcome!

Here are some simple directions and photos of my cake, inside and outside. The entire cake was vegan and we totally licked our plates!

For the cake:

Each layer was 1 BOX of Simple Mills Chocolate Cake Mix. I used 3 flax eggs for each box of cake. (1 flax egg = 1Tb flax seed meal + 3TB warm water. Let sit for 2-3 minutes until it forms into a gel). I used Chameleon Cold Brew Organic Mocha Coffee Concentrate in place of water in each box of cake. I also used organic extra virgin olive oil instead of coconut oil as well.

Layer each cake with a generous amount of Simple Mills Organic Chocolate Frosting. Crumble Newman O's cookies in a Ziplock bag to carefully add to the sides of the cake.

Top with gorgeous blinged out glittery cake topper from The Party Palate & enjoy!

Everyone was amazed that this cake was considerably lower carbs and sugar than if you were to make a cake using a famous store bought mainstream cake mix and store bought mainstream frosting. This cake was a chocolate lovers dream, so rich in flavor and it was the perfect birthday cake ever!

I would make this cake all over again in a heartbeat!
