Easy Chocolate Mickey Truffles (2 Ingredients) | Top 8 Free

Continuing Food Allergy Awareness Week with one of the very first allergy friendly brands that I found 10 years ago, Enjoy Life Foods. Oh, goodness, I found their Mini Chocolate Chips, and the love was instant. It was “love at first chocolate chip” you could say.

This company makes products that are free from 14 food allergens, which are also certified gluten free and nonGMO verified, too. Their ingredients are carefully sourced so that you can EAT FREELY! They use natural products like quinoa, dried fruits and even rosemary extract. My most favorite product of theirs is their Chocolate Chips, but we’re also a fan of their LENTIL CHIPS, BREAKFAST OVALS and everything else they make, too. I have made this recipe before using other ingredients, but I wanted to share an allergy friendly version that you can make at home using just 2 ingredients.

Obviously you need Enjoy Life Chocolate Chips (minis, chunks or semi sweet morsels) and then any kind of seed butter (if you can have nuts, but not seeds, then use a nut butter and use what is best for you and your family to make this a SAFE treat to eat). I am using SunButter for this recipe as it’s just made with sunflower seeds. You can use any silicone ice cube mold or chocolate mold. I got mine from Disneyland Paris but you can find anything on amazon like this one.

For this recipe it’s important that you follow chocolate melting instructions carefully so that your chocolate doesn’t turn white. You will need a makeshift double boiler.

Makeshift Double Boiler: Fill a soup pot about 1/4 the way with water and bring to a boil. Then reduce heat to low and place a glass bowl on top so that the water does not touch the bottom of the bowl. Pour chocolate chips in the glass bowl and it will melt. It’s a slower process than melting in the microwave, but this insures that the chocolate doesn’t bloom. (Chocolate bloom is the white coating that can appear on your chocolate which is caused by the changes in structure of the fat crystals in the chocolate) If you want to see a quick 1 minute video about this click here. __________ INGREDIENTS 1 bag Enjoy Life Foods Chocolate Chips SunButter (or other nut or seed butter) Directions: Melt chocolate over a double boiler over medium to low heat. You really want to make sure that the heat is low so that your chocolate doesn’t bloom. Once melted, pour chocolate into your favorite candy mold so that it’s about 1/3 full. Swirl the chocolate around within each mold so that it coats all the sides. Place mold in the fridge to harden. After about 20 minutes in the fridge, remove mold from the fridge and fill with your choice of seed butter (or nut butter if you can eat nuts). Pour remaining melted chocolate over the “filling” so it covers the sunflower seed butter and the chocolate is level with the top. Place in the fridge for at least 20 minutes and then carefully remove each chocolate from the molds and enjoy!
