Gingerbread “Shortbread” Men Cookies


Christmas doesn’t feel like Christmas without Gingerbread men! Need a yummy cookie recipe for Santa? I got you! These little mini cookies are packed with flavor, collagen and protein. I used Vital Proteins new Gingerbread Collagen Creamer and just a short list of ingredients to make these little guys!

These cookies are super low in sugar with only 3TB of Maple in the whole batch + gluten free, dairy free, egg free and paleo!. Plus, they are so easy to make!

I love The Maple Guild's maple syrup so much. It's my preferred maple for all baking recipes.


For a “sweet” trick on 1-ingredient frosting - pun intended - use some maple butter, also known as maple cream. It's sweet, only has 1 ingredient and tastes rich and creamy. It's the perfect combo for this delicious gingerbread cookie.

INGREDIENTS

2/3 cups coconut flour

pinch sea salt

3 TB Maple Syrup

1/3 cup coconut oil

1/8 tsp ginger

1/8 tsp cinnamon

Frosting:

Maple Cream

Directions:

Mix coconut oil and maple until well combined.

Add in the rest of ingredients, mix well.

The dough might seem crumbly, just use your hands and form into a ball.

Roll out between parchment paper, about 1/4 inch. The dough will be delicate but easy to use cookie cutters with. Using a spatula, put the cookies on baking sheet and bake at 350 for 7-8 min until golden brown edges.

Eat plain or use some maple cream! Enjoy
