Cauli “Tater” Salad with Green Goddess Dressing


​I have been wanting to make cauliflower “potato” salad for the longest time, and I finally did it! I don’t know why I waited so long, because it is pretty legit. My husband and I love potato salad, but we rarely have it because we don’t eat much potato.

My grandma used to make the best potato salad with eggs and probably miracle whip, if we are being honest here. Her potato salad is the only one that I like that has egg in it. She hasn’t made it in a long time, but I do remember she used to make it a lot when I was growing up.

I decided to put a twist on traditional potato salad and switch up the mayo and use one of my favorite dressings, Green Goddess from Primal Kitchen Foods. This dressing is dairy-free, gluten-free, soy-free, sunflower and safflower oil free. It’s made with pure avocado oil and mostly organic. If found this awesome dressing at Expo West and it became one of my Top 10 Favorite Finds!

Primal Kitchen Foods makes incredible salad dressings and marinades. Their Greek Dressing is definitely a must-have dressing. I make a delicious Horiatiki (Greek Salad) using it. Their avocado oils are tasty to cook everything in, their paleo bars are yummy and I really love their new Collagen Fuel that just launched! I tasted it at Expo West and it was REALLY good!

Let’s talk about this cauli “tater” salad!

INGREDIENTS

1 medium head cauliflower, steamed

4-5 eggs, hardboiled

chives to garnish

2-3 pieces crispy bacon (optional)

Directions:

Steam your cauliflower until you can stick a knife in it easily and have it pull out of the cauliflower head easily. Put cauliflower in the fridge to cool it down.

While Cauliflower is cooling off in the fridge, hard-boil your eggs, place them in an ice bath and set aside.

Make some bacon and set aside.

When your cauliflower is nice and cold, remove it from the fridge and cut it into bite-sized pieces and add to a medium size bowl. Remove the shells from your hard-boiled eggs, cut them into small pieces and add them to the cauliflower.

Pour the Green Goddess Dressing over the cauliflower and egg mixture and stir so that each bite is covered in dressing. You may need to add more dressing depending on how big your cauliflower is.

Cut some chives and sprinkle on top. Top with cooked bacon and enjoy.
