Mickey Mouse Vegan Brown Rice Krispee Treats - (two ways)



Rice Krispee Treats are loved by people of all ages! It seems like even people who aren’t the biggest fan of marshmallows enjoy this dessert that dates back to the 1930s.

You can make many versions of this tasty treat: pumpkin spice, brown buttered, dipped in chocolate, etc. But no matter what, you can never go wrong with a plain Rice Krispee Treat.

This week, I am so excited to visit the Happiest Place On Earth with one of my dearest friends and her sweet daughter, both who have never visited a Disney theme park before and who are also vegan. I say that they are vegan because there aren’t too many “treats” you can find at Disneyland that are vegan or food-allergy-friendly.

I really want to make their trip to see Mickey super special, so I decided to make some vegan brown rice krispee treats in the shape of the man himself: Mickey Mouse. I dipped his ears in Enjoy Life Foods vegan mini chocolate chips and even made some that are a girly pink color using an awesome natural food dye made from beets.

I used our favorite butter from Miyoko's Kitchen. You can buy this butter at Trader Joe's or order it online.

I can’t even wait to whip these treats out when we are at Disneyland and surprise this sweet little girl on her very first trip to the Happiest Place On Earth.

INGREDIENTS

1 package (10oz) of Dandies Mini Marshmallows


2 TB coconut oil

Optional:

- For Chocolate coating, melt Enjoy Life Foods Vegan Mini Chocolate Chips over a double

broiler.

- For Pink (or another beautiful natural color of your choosing) use one package of Color

Directions:

In a medium to large pot, on medium low heat, combine vegan butter, coconut oil and marshmallows. Stir until marshmallows are broken down and gooey. If you would like to add food coloring, add a packet of the Color Kitchen Foods Natural Food Coloring now and stir.




Pour cereal in and mix until evenly coated in marshmallow.



Spray a 9 by 13 dish with olive oil spray (or any spray) well. Pour the mixture into the dish and press it out evenly.

Once the rice krispee treats are fully cooled, cut it into squares or spray the cooking spray on a Mickey Mouse cookie cutter and carefully cut out Mickey Mouse shaped treats. Its easiest if you put the whole mixture onto a piece of parchment paper to cut out your Mickeys. Make sure to spray the cookie cutter in between each treat.


For chocolate ears, melt chocolate over a double broiler. Once melted, dip each ear into the chocolate and allow to cool onto parchment paper.

To speed up the chocolate hardening process, place Mickey Treats onto parchment paper and stick in fridge for 15 minutes.
