Simple Mills Artisan Bread Mix (Flatbread/Buns/Dinner Rolls) Paleo

If you follow me on Instagram, you will see that I do post quite often about this amazing bread mix from Simple Mills. I had the privilege of interviewing the founder of Simple Mills at Expo West back in March, and I got to tell her how much my husband and I love this "bread" and eat it about 2-3 times per week. We really do love it that much!

I have made every single mix in the Simple Mills line, and they are all outstanding! We really love them all. For my husband's 30th birthday, I made the Chocolate Cake Mix and have posted about the Vanilla Cake Mix, too. I don't know why I have waited so long to post about my favorite of all the mixes: this bread mix. I guess we have been so busy making this mix a few times a week.

When you are trying to eat low carb, you end up craving "carb-like" foods such as bread and rice and pasta. Since those foods are high in carbs and aren't that nutritious, you have to get creative and go for things like: cauliflower rice, Tolerant Foods Organic Red Lentil Pasta (higher in carbs but high in fiber as well and protein, too), zoodles and this incredibly tasty almond flour bread mix from Simple Mills.

Let's start with the ingredients:

Almond Flour

Arrowroot Flour

Flax Meal

Baking Soda

Sea Salt

Organic Coconut Sugar

All you need to add to it is:

3 eggs*

2 TB olive oil

1/4 cup apple cider vinegar

*Flax egg - mix 3 TB of warm water with 1 TB of flax seed meal.

Let it sit about 3 minutes until it forms a gel = 1 egg.

Almonds are so incredible nutritious; not only are they considered a healthy fat, but they can be milled into a fine flour and used in so many delicious recipes (pancakes, crackers, cookies, etc.). They are a great source of protein, which keeps you full; magnesium, which is great for bone health; and Vitamin E, which is a powerful antioxidant!

This artisan bread mix is so versatile; you can make flatbread, dinner rolls, sandwich bread and even something new that I discovered... hamburger buns for cheeseburgers, sloppy joes or veggie burgers! WHAT?! I know, right? Pretty cool!

You can purchase Simple Mills Artisan Bread Mix HERE or at your local Whole Foods Market or Mother's Market. It's so easy to make! You will love it!

Here is my my recipe for the artisan bread mix to make burger buns.

Prepare the Simple Mills Artisan Bread Mix as directed according to the flatbread recipe on the back of the box.

Using a muffin top baking pan, divide the batter evenly amongst the 6 muffin tops. Bake at 350 degrees for 17-20 minutes. Allow to cool before using for your cheeseburger, veggie burger or sloppy joes!
