Oatmeal Energy Bites (No Bake)



This is an easy recipe. I really don't have much to say about it except that they get eaten pretty fast in our house! I love that they can be made vegan by using maple syrup or agave instead of using honey, and you can omit the chocolate chips if you want (though I don't know why anyone would want to do that). They are a great snack, breakfast treat or even dessert. Enjoy!

INGREDIENTS

1 cup rolled oats

1/2 cup peanut butter or almond butter

1/3 cup honey (maple syrup or agave)

1 cup shredded coconut

1/2 cup flax seed meal

2 tsp vanilla

2 TB Flax Milk (we prefer Good Karma Foods Brand)

1/2 cup Enjoy Life Mini Chocolate Chips (vegan)

Directions:

Mix your dry ingredients: (rolled oats, flax seed meal, chocoalte chips & shredded coconut)


Mix your wet ingredients: (almond butter, vanilla, honey, flax milk)


Pour your dry ingredients over your wet ingredients and mix well.


Put the bowl in the fridge for 20 minutes. After 20 minutes, roll the mixture into bites! This process can get sticky so you can either wet your hands as you go, or tough it out with the ooey gooey-ness. Store in the fridge.


This recipe will make about 20 "bites".... and will last as long as your will power will allow.
