Strawberry Vinaigrette Dressing | Paleo, Vegan & Whole30

45 second Strawberry Vinaigrette? Yes! First of all, strawberries are so delicious and sweet when they are ripe. They are the only fruit to have seeds on the outside, and they are a member of the rose family. Strawberries are packed with Vitamin C, fiber and antioxidants.


Strawberries are also delicious in salads and even salad dressing. You can make an easy strawberry Vinaigrette with just a few ingredients: olive oil, apple cider vinegar and sea salt. You could also add a date or honey if you feel that it needs some sweetness. Keep in mind that adding anything other than a date will make this recipe not Whole30 compliant.


I used Bragg Apple Cider Vinegar and Bragg Olive Oil for this recipe. I have loved this brand for over 25+ years and I continue to love their products to this day.


This recipe is for 2 people. My hubby and I ate this for dinner the other night.

INGREDIENTS

Dressing:

8 oz strawberries

1/2 tsp sea salt


optional: 1 date or 1/2 TB Manuka Honey


Salad:

1 6oz bag spinach

1 large apple

1/4 cup walnuts, toasted

4 strawberries

2 chicken breasts (optional)

1/4 cup blueberries (optional)


Directions:

Wash and cut strawberries and place them in blender. Add apple cider vinegar, olive oil and sea salt and blend until smooth. Add a date or Manuka honey if you like and blend. Set aside.


For salad: (If using chicken) Heat oil of choice in large skillet over medium high heat. Season chicken with sea salt and black pepper. Once pan is hot, carefully place chicken breast in skillet and cook for 5 to 7 minutes on each side. Chicken should reach 165 degrees F internally. Slice, dice or hand shred (once cooled) and set aside for salad.


Toast walnuts on medium heat (be careful that you don’t burn them). Place spinach in a large salad bowl. Place chicken on spinach. Cut apples into but size pieces (or use a cut mini cookie cutter and create cute shapes). Cut strawberries into quarters and place apples and strawberries on spinach.


Sprinkle blueberries if you desire.


Pour salad dressing over salad, toss and serve.
