Salted Dark Chocolate Olive Oil Cake (For Two) | Paleo & Gluten Free (Oven or Microwave)

Olive oil and sea salt and chocolate, OH MY! Yes this combo works really well and is super rich. If you love dark chocolate then I see you eating this tasty cake in your near future. There is no dairy, gluten, grains, almond or nuts used other than coconut flour & milk (which technically is a fruit).


You can make the recipe in the oven using a muffin/cupcake tin (it makes 2 cupcakes), or you can make it in the microwave in a big mug. In our house we personally choose to not use the microwave, but I wanted to give you the directions in case you do.


For the frosting, I wanted to keep it simple, so I just melted chocolate together with some really good olive oil and a pinch of sea salt. That's it. You can totally add sprinkles if you like, because sprinkles make everything pretty.

She has an amazing book SHE DOES KETO (check it out here) and an incredible chocolate bar which she created with The Good Chocolate that is totally keto friendly, nut free, dairy free, gluten free and it's pretty tasty, too! INGREDIENTS

1 egg

2 TB coconut milk or milk of choice

2 TB cacao powder

1 tsp vanilla extract

1 TB coconut flour

1/8 tsp sea salt (or Redmond Real Salt)


*Recipe notes: you can use real maple syrup in place of the NuNaturals Pourable Stevia Maple Syrup for this recipe if you'd prefer and whichever kind of milk you'd like.


Frosting:

1 TB of chocolate chips or chocolate bar of choice

pinch of sea salt


Directions:

If using the oven, preheat to 350 degrees.


In a mug or mixing bowl, mix together all the ingredients for the cake. Start with wet and then add the dry ingredients. Mix well.


Microwave your mug for 60-90 seconds until middle part of the cake is cooked. Once cooked, the cake will be very hot. Make the frosting (either in the microwave or over the stove top in a makeshift double boiler) and pour frosting on top of the mug cake. Add sprinkles and enjoy!




For oven instructions, place two spots of your cupcake pan with cupcake liners. Pour 1/2 the batter in each cupcake liner and bake for 18-20 minutes. Carefully remove from the oven and allow to cool. Make the frosting (either in the microwave or over the stove top in a makeshift double boiler) and pour frosting on top of the mug cake. Add sprinkles and enjoy!
