Low Carb Keto French Toast With Unbun Foods (Gluten Free & Paleo)

I love bread, and I know you do, too! Bread can do so many things, right? It can hold meat, veggies, and spreads also known as a “sandwich”. It can be eaten plain, with spreads on top, or you can even make French toast. It’s a magical food, my friends.


Keeping it real, I try to eat pretty low carb on the regular, but I hate giving up bread to do that. I love that I can use Unbun Food’s Unbuns, Unbaguettes and Untortillas for all my bread needs (they even have a plant based version, too), and they just launched in Whole Foods nationwide!


I love Unbuns because they taste great, have simple ingredients and are filling but don’t feel heavy. They are gluten free, grain free, paleo, keto friendly, low carb and have no added sugars. They make it easy to stay low carb while still being able to have bread, too. And — even if you aren’t “low carb”, keto or paleo — they are still a really great option that you can find at Whole Foods Market.


I even figured out a super simple, basic and very tasty recipe using a bag of their Unbuns! There are 4 in a package and are so perfect for this great low carb French Toast Casserole!


You can totally customize this and add or swap out the blueberries for chocolate chips or different berries. Or, perhaps, use both at the same time to take your French toast to the next level.


Top with your favorite maple syrup or low carb / keto friendly maple syrup, some nut butter or seeds, “powdered sugar” or chocolate chips.

INGREDIENTS

1 package of Unbun Foods Unbuns

7 eggs

1/4 cup dairy free milk of choice

Dash of cinnamon

1/4 cup blueberries

1/4 tsp sweetener of choice (optional)*


*I use a 1/4 tsp of monk fruit sweetener, but you could use whatever you’d like. It’s totally optional.


Directions:

Preheat oven to 350 degrees.


In a mixing bowl, tear all four Unbuns into small bite size pieces.


In a separate bowl, combine eggs, milk of choice, cinnamon and sweetener of choice.


Pour mixture over Unbun pieces until bread is covered. Fold in 1/4 cup blueberries (fresh or frozen).


Spray an 8 x 8 baking dish with coconut, olive or avocado oil spray and pour bread mixture in.


Bake for 35-45 minutes - until center is cooked.


Remove from the oven and cut into 4 pieces. Serve & top with fresh berries, whipped coconut topping, maple syrup, chocolate chips or even nut butter of choice.
