Naughty or Nice Cauliflower Rice with Fruit Bliss Dried Apricots | Organic, Vegan, Gluten Free, Pale

Happy December! I am all about the food during the holidays. Aren’t you? I love all the Fall and Winter flavors and spices. More importantly, I love the family time and I love cooking for my loved ones.


It seems like the past few times that I have made cauliflower rice for my family they either have no clue that it’s not real rice or they don’t believe that it’s really cauliflower! I have had to fully convince some of my family members that it’s low carb and not actually a white or brown rice.

Fruit Bliss makes Organic Turkish Dried Apricots that are pitted, soft and juicy! They are Non-GMO Project Verified, Vegan and Kosher as well. Their process is minimal as the fruit is dried in the sun and the only thing added is water to steam or dehydrate! Their fruit might seem darker in color but that’s because they skip the preservatives and added chemicals that give other dried fruits a bright color. These sweet, tasty, juicy apricots go great with cauliflower rice to create a sweet and savory side dish for the holidays.

INGREDIENTS

2 1/2 cups fresh cauliflower rice

1 1/2 cups celery, chopped

2 cups yellow onion (or about 2 large onions), chopped

1 TB fresh thyme

3/4 cup sliced almonds

1/3 cup green onions, sliced

2 TB extra virgin olive oil

Directions:

In a large skillet (we use cast iron), add 2 TB of olive oil and sauté the celery and yellow onion until translucent on medium heat. Should be about 5-8 minutes.


Add in your fresh cauliflower rice. You could use frozen cauliflower rice but it won’t be as close to “rice” texture as fresh cauliflower would be. Stir to combine with the onions and celery until cauliflower rice is hot. About 2-3 minutes.


Add in the thyme, and cut apricots and green onions and stir.



Lastly, add in the sliced almonds and stir for 2 minutes so that the almonds heat up.

Serve hot.
