Cashew Collagen Bites with Ashwaganda



Raw cookies for breakfast? Um, YES!

These raw cashew collagen bites are definitely a must-have with a latte - either matcha or espresso - to complete the morning routine. I had to add some amazing Vital Proteins Collagen Peptides to this recipe, not only because they have collagen, which has so many amazing benefits, but they also have ashwaganda! Ashwaganda is an herb that contains many healing properties. It helps the immune system, supports emotional balance and brain function, aids in strength and reduces the effects of mental, emotional and physical stress.


Ashwaganda is also known as "Indian Ginseng" and has also shown the ability to fight against cancer, diabetes, reduce inflammation, arthritis, asthma, and rheumatism. You can read more about ashwaganda, here. I use Sun Potion's organic ashwaganda, and I add it to my smoothies every single day.

I decided to make these yummy raw cashew collagen bites with the pulp from my cashew milk, because I did not want to waste any bit of it. Every time I make cashew milk, I make these yummy raw bites that satisfy a sweet tooth or for a light snack that is filled with fiber and healthy fats to keep you satisfied. Cashew milk is super easy to make and will make any smoothie, latte or hot chocolate much creamier!

If you don't love eating a big, hearty breakfast, then these would be good to pair with your morning coffee, tea, or protein shake.

INGREDIENTS

1/2 cup cashew pulp (from 1 batch of homemade cashew milk)

3/4 cup old fashion rolled oats (we use Bob's Red Mill)

1/4 cup shredded, unsweetened coconut

1 tsp vanilla

1 heaping scoop, Vital Proteins*

2 TB cashew butter

2 tsp ashwaganda (we use Sun Potion)

2 TB flaxseed meal

1 TB maple syrup**

*Omit to make vegan

**Taste the mixture and decide if you want to add one more TB of maple syrup to sweeten to your liking

Directions:

In a large bowl, mix all the ingredients together until a dough forms. Place bowl in fridge for 25 minutes.

Using a 1.5 TB scoop or eyeballing it, roll into evenly sized balls.

Store in container in refrigerator.
