Peppermint Hot Chocolate Freezer Fudge

I know it’s not Christmas time, but peppermint chocolate is such a tasty combination! It might be almost Summertime, but I am digging this holiday flavor right now! Santa isn't coming to town for another 200 days.

Just in case you don’t love the peppermint chocolate combo, you can easily leave the peppermint out of this recipe and you will have Hot Chocolate Fudge -- equally tasty!


Have you ever made tahini fudge? It’s great and, honestly, with some cashew butter mixed into it, it’s even better! This is a quick and easy dessert recipe that you can whip up and have ready to eat in no time + there is no baking involved.


I love adding collagen to whatever I can in the kitchen. I just wrote about easy ways you can collagen to your life in another post and making this fudge with this brand new Hot Chocolate Collagen Latte Mix is a perfect way to add some collagen to your life.


The brand new Vital Proteins Collagen Lattes are made with bone broth collagen, organic ashwaganda and only has 1g of sugar per serving. With 10g of protein per serving you can just add it to hot water or hot dairy free milk and enjoy or serve it over ice! You could also make fudge with it, too!


You will need a silicone mold like THIS ONE. You could also use silicone molds in different shapes like THIS ONE.

INGREDIENTS

1/2 cup tahini

1/2 cup cashew butter

3/4 cup coconut oil, melted

2 TB maple syrup

2 TB cocoa powder

1 TB vanilla extract

1/2 tsp sea salt

4 scoops Vital Proteins Hot Chocolate Collagen Latte Mix

3/4 - 1tsp peppermint extract (optional)


Directions:

Mix everything in a mixing bowl until fully combined. Use as much or as little peppermint as you prefer.


Carefully pour the mixture into your silicone tray and place in the freezer for at least 40 minutes.

Pop them out of the silicone mold and enjoy. Store fudge in freezer, let sit out for 5 minutes before you take a bite — or you can be like me by just go for it and eat it frozen!
