Cucumber & Red Onion Salad

Spice things up with your avocado toast & salads! Want to make something that has lots of yummy flavor, doesn't require many ingredients and that you can whip up in just 10 minutes?


Right now, ingredients might be limited in your kitchen so I want to share as many recipes that I can that have minimal ingredients. I think my mom used to make a salad like this when I was a kid. It's funny because I don't like pickles but I like pickled things like pickled red onions and cucumbers.


I love adding this on top of my salad, avocado toast and eating it plain, too.

INGREDIENTS

3-4 Persian cucumbers (or 1 large cucumber) 1/2 red onion 1/2 cup apple cider vinegar 1/4 cup rice vinegar*

1/4 cup white vinegar* 1 tsp sea salt


*You can use whatever vinegars you'd like. My favorite combo is what's listed above but you could use any combination of white, red, rice, apple cider vinegar for this recipe. I do like using the 1/2 cup of apple cider vinegar for the base and mixing up whatever I have on hand for the other 1/2 cup (the 1/4 and 1/4)

Directions: Slice cucumbers on the thin side. Slice onions into long pieces (or whatever texture you desire). Place in a bowl or large mason jar. Pour vinegars in until cucumbers and onions are covered. Add sea salt. Cover and store in fridge. Use on avocado toast, salads or eat as a side dish with your lunch or dinner.
