Red Velvet Pancakes | Gluten Free & Paleo

This post is sponsored by Ninja Kitchen and Glean.

I found Glean a few months back during Expo East. I wasn't able to make it out to Baltimore, but I found Glean on social media and was so impressed by their products and ingredients that I knew I had to reach out to them. They sent me their Sweet Potato Flour and their Pumpkin Flour, and I created the tastiest Sweet Potato Pancakes and Pumpkin Spice Cookies with Pumpkin Frosting!

This recipe is a part of a special Holiday Recipe Challenge, and I am so excited and grateful to be a part of it. I decided to use the flour that I was least excited about only because I don't like beets. I wanted to challenge myself with the Beet Goodness and make something tasty -- and that I did! Guess what? Now I am excited about Beet Goodness & technically can say that I like beets (at least I like it in red velvet pancakes!)

Beets are so good for you! They are low in calories, high in fiber and in vitamin C. They contain lots of nutrients and folate and are a nutrient dense food. They naturally are a beautiful bright red/dark pink color and can be used in a number of ways. Whether for sweet or savory, you can use beets in a number of recipes including these yummy pancakes! Consider adding this Beet goodness to a smoothie or even to bright up a sauce or baking batter.

I am excited to partner with Glean and Ninja Kitchen for this incredible challenge! They sent me this fabulous, high tech, smart blender called the Ninja Smart Kitchen System with FreshVac Technology. Guess what? YOU can win one too, along with a Ninja Air Fryer and products from Glean! Prize valued at $400! There will be 10 winners!

Click HERE and vote for your favorite recipe! Of course, you should vote for my RED VELVET PANCAKES! If my recipe wins then I also get some amazing prizes from Ninja Kitchen, too! I hope you win, and thanks for entering the amazing giveaway! Thanks in advance for voting for me, too!

Red Velvet is such a decadent flavor. It's even more decadent when made into pancakes! With a handful of healthy ingredients these tasty pancakes were created, and I am so excited to share this recipe with you! I love that it can be made right in the Ninja Kitchen Blender!

Glean makes wonderful products, including this Beet Goodness which is made of 100% beets. It’s naturally gluten free, vegan and paleo, and it can be used for either sweet or savory recipes. You can add it to smoothies, bake with it, cook with it, add it to sauces or anything else your heart desires.

Guess what? Ninja Kitchen & Glean gave me coupon codes to share with you. Neither are affiliate codes, they are just codes because I love them and they love me back!

2 eggs

1/2 cup almond milk (or dairy free milk of choice)

2 tsp vanilla

1 TB maple syrup

3 TB Cocoa Powder

1/2 tsp baking soda

1 TB flaxseed meal

2 TB coconut butter, melted or room temp

1/2 TB maple syrup, room temperature

1 1/2 TB coconut oil, melted

In your Ninja Blender, add all of the ingredients, starting with the wet ingredients first. Blend until batter is formed. This doesn’t take long at all.

Turn your cast iron skillet on medium heat. Add about 2TB of oil of choice (olive oil, coconut oil, melted butter or ghee).

Once your skillet is hot, add about 1/4 cup batter and cook until you see little bubbles on top. Flip your pancake and cook for another minute.

Stack on a plate as high as the sky!

For the frosting, mix all the ingredients together starting with the coconut oil and coconut butter. Add in the cashew butter and, lastly, the maple syrup. Make sure that the maple syrup is room temperature or warm, if possible. Otherwise the mixture will harden. You can add an extra TB of melted coconut oil if you'd like to make the frosting extra runny.
