Red Velvet Pancakes | Gluten Free & Paleo

This recipe is a part of a special Holiday Recipe Challenge, and I am so excited and grateful to be a part of it. I decided to use the flour that I was least excited about only because I don't like beets. I wanted to challenge myself with the Beet Goodness and make something tasty -- and that I did! Guess what? Now I am excited about Beet Goodness & technically can say that I like beets (at least I like it in red velvet pancakes!)
Beets are so good for you! They are low in calories, high in fiber and in vitamin C. They contain lots of nutrients and folate and are a nutrient dense food. They naturally are a beautiful bright red/dark pink color and can be used in a number of ways. Whether for sweet or savory, you can use beets in a number of recipes including these yummy pancakes! Consider adding this Beet goodness to a smoothie or even to bright up a sauce or baking batter.

Red Velvet is such a decadent flavor. It's even more decadent when made into pancakes! With a handful of healthy ingredients these tasty pancakes were created, and I am so excited to share this recipe with you! I love that it can be made right in the Ninja Kitchen Blender!

You can add it to smoothies, bake with it, cook with it, add it to sauces or anything else your heart desires.

1/2 cup almond milk (or dairy free milk of choice)
2 tsp vanilla
1 TB maple syrup
5 TB Paleo Baking Flour
1 1/2 TB Glean's Beet Goodness Powder
2 scoops Vital Proteins Collagen Peptides
3 TB Cocoa Powder
1/2 tsp baking soda
1 TB flaxseed meal
2 TB coconut butter, melted or room temp
1 TB cashew butter
1/2 TB maple syrup, room temperature
1 1/2 TB coconut oil, melted
In your Ninja Blender, add all of the ingredients, starting with the wet ingredients first. Blend until batter is formed. This doesn’t take long at all.
Turn your cast iron skillet on medium heat. Add about 2TB of oil of choice (olive oil, coconut oil, melted butter or ghee).
Once your skillet is hot, add about 1/4 cup batter and cook until you see little bubbles on top. Flip your pancake and cook for another minute.
Stack on a plate as high as the sky!
For the frosting, mix all the ingredients together starting with the coconut oil and coconut butter. Add in the cashew butter and, lastly, the maple syrup. Make sure that the maple syrup is room temperature or warm, if possible. Otherwise the mixture will harden. You can add an extra TB of melted coconut oil if you'd like to make the frosting extra runny.
