Namaste Foods Organic Devils Food Cake

You already know how much my family and I love the products from Namaste Foods. We love their Pizza Crust Mix, Dark Chocolate Brownie Mix, Gluten Free Flour and their Yellow Cake Mix. Just a few days ago I made their brand new Devils Food Cake to celebrate some family birthdays. I made cupcakes and everyone loved them ... not surprised, as everyone I make Namaste Foods' products for loves and devours them.

This mix is gluten-free and dairy-free, as well as free of wheat, gluten, egg, dairy, peanuts, tree nuts, corn, sulfites, sesame, casein, potato, and soy.

You can use the Namaste Foods Egg Replacer, flax eggs or regular eggs to make these. I have had success using each of these methods with their products. This time I used eggs, since everyone I was making these for could have eggs. By the way, if you are ever baking for someone or a group of people, it's always a good idea to double check for food allergies.

You can find this mix on the Namaste Foods website. I love this Devil's Food Cake Mix. It's really tasty, great texture and I would make this again in a heartbeat!

What you'll need:

2 eggs

Water

Olive oil (or oil of choice)

A few notes...

I always use olive oil when it comes to baking. It's just me. You can choose another oil. Keep in mind, I personally don't recommend canola oil. You could use coconut oil, but it would change the flavor a bit. Also, instead of water, you could use coffee or espresso. It adds great flavor to any chocolate mix! I would have done that this time, but we we had already downed all of the coffee we had brewed that day.

Directions

Set oven at 350 degrees.

Set paper liners in cupcake tin.

Combine eggs, olive oil and flax milk (or dairy-free milk of choice) in a mixing bowl. Add cake mix and then mix until smooth.

Carefully and evenly pour mixture into cupcake tin. The box says you can make 10 cupcakes; I made 12, and I may or may not have had a few bites of the batter to make sure it tasted good! I also may or may not think the batter tastes DELICIOUS. SHHHH!

Bake cupcakes for 18-22 minutes.

Allow to cool.

Frost using your favorite frosting recipe, THIS 2 ingredient vegan buttercream recipe or Simple Mills Organic frosting.

I used the Vanilla Simple Mills Frosting and everyone loved them! I hope you get a chance to make this awesome cake mix from Namaste Foods.
