Strawberry Rhubarb Pie Smoothie


One of my favorite desserts that my Grandma Winnie makes is strawberry rhubarb pie - oh my wow! I love rhubarb, and think it's underrated, honestly.

The other day I was at our local Sprouts Farmer's Market and saw they had some rhubarb in their freezer section. I put it in my shopping cart and thought about what I could make with it. I immediately grabbed frozen strawberries and thought about making a smoothie inspired by my grandma's delicious dessert.

INGREDIENTS

2/3 cup frozen strawberries*

2/3 cup frozen rhubarb*

1 1/4 cup flax milk (or milk alternative)

1 TB honey or agave

1 TB flaxseed meal or chia seeds

a sprinkle of cinnamon

a sprinkle of nutmeg*

1 scoop of vanilla protein powder (optional)

*use a heaping 2/3 cup - see photos below.

Directions:

Put all ingredients in the blender and blend until smooth and creamy.
