"Cheez-It” Crackers (vegan)
I have been making these crackers for about a year now, and they really are a wonderful alternative to the normal Cheez-It crackers you are used to. They are grain free, low in carbs, filled with protein and I also make them vegan. There is something about the original version that is just so addicting and yummy… until you read the ingredients. I basically can’t have anything in the original brand, so finding this new recipe was super exciting!
I am so excited to finally post this recipe. I wish I could say that this one was my own but it’s not. This recipe comes from Kate’s Healthy Cupboard and trust me when I say that these totally hit the spot when craving a snack, crackers of any type or the original & loved Cheez-It crackers we all grew up on.
My dad loves these crackers so much! He is vegan and used to indulge in the original crackers back in the day. However, since that isn’t an option anymore, he is so happy that I found this recipe AND changed up one ingredient to make them totally vegan! He always asks me to make these for him.
Here is the recipe along with photos of the process.
1 3/4 cup almond flour
3 TB Nutritional Yeast
1/2 tsp sea salt (plus more for sprinkling on top)
1 TB vegan butter, melted (we use Miyoko's Vegan Butter)
2 TB lemon juice, freshly squeezed
1 flax egg*
*Flax egg - mix 3 TB of warm water with 1 TB of flax seed meal. Let it sit about 3 minutes until it forms a gel = 1 egg).
Mix all dry ingredients in a large mixing bowl (salt, nutritional yeast & almond flour)
Mix wet ingredients in mixing bowl (flax egg, melted butter & lemon juice)
Combine the wet and the dry ingredients and mix well. The dough will easily form a large ball.
Using two sheets of parchment paper and a rolling pin, roll 1/2 the dough out thin (about 1/8inch).
You can use a knife, pizza cutter or cookie cutter to cut out crackers. I prefer the cookie cutter, because it really makes the crackers cute and similar to the original Cheez-It crackers. You can find these cute cookie/cracker cutters HERE.
Then, to make the little "hole" in the center of each cracker, I use the end of one of my electric mixer beaters.
Use a spatula to lift the crackers onto a cookie sheet that is lined with parchment paper. Once cookie sheet is full, sprinkle sea salt on top.
Bake crackers at 350 degrees for 12-15 minutes. Check them at about 10 minutes to see if the tops are turning brown. You can remove those that have turned brown and allow the rest of them to cook for a few more minutes if needed.
Be careful, these crackers are highly addictive and won’t last too long on the counter.
